Orange Rice
1/4 cup butter or margarine
2/3 cup chopped celery
2 tablespooons minced onion
1 tablespoon grated orange peel
1 cup orange juice
1 teaspoon salt
1 1/2 cup water
1 cup regular long-grain rice
In medium saucepan over medium heat cook celery and onion in butter, until tender (about 5 minutes). Add 1 1/2 cups water, orange peel, juice, and salt. Heat to boiling; stir in rice; reduce heat to low; cover and simmmer until rice is tender and all liquid is absorbed. Makes 6 servings.
